The SEP is not the standard deviation of a sample, it can although be considered as the standard deviation of the prediction residuals. It is used as a performance measure for NIR spectroscopy and can be interpreted as the average difference between the predicted and actual value in a prediction set. SEP for us measures the precision of the predictions. We often get more than one spectrum per fruit and we run the mathematical model on each individually to get a predicted value for the property being measured.
